In an effort to figure out my health issues, I’ve decided to try to go gluten-free for a while. This is much harder than you might think. The most bizarre things have wheat flour in them…like the licorice candy I bought a couple of days ago. And most speedy/easy foods that I eat are out: Eggos-out, graham crackers-out, Life cereal-out, sandwich-out, pasta-out…

So today I made a Greek salad. I hadn’t made one for a long time. I fudged a bit and left out the peppers and olives. It was pretty darn good. The fresh basil really makes this dish. I’ll have to plant a little windowsill herb garden soon.
